Ingredients
Scale
Protein
- 2 boneless skinless chicken breasts, sliced
Vegetables
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 cloves garlic, minced
Dry Ingredients & Seasonings
- 2 tablespoons Cajun seasoning
- Salt and black pepper, to taste
Dairy
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
Other
- 2 tablespoons olive oil
- 12 oz fettuccine pasta
- Fresh parsley, chopped (for garnish)
Instructions
- Cook Pasta: Boil your fettuccine pasta according to the package instructions until al dente. Once cooked, drain the pasta thoroughly and set it aside to keep warm while you prepare the sauce and chicken.
- Season Chicken: Season the sliced chicken breasts with Cajun seasoning, adding salt and black pepper to taste to enhance the flavors.
- Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken slices and cook for about 5 to 7 minutes or until they turn golden brown and are cooked through. Remove the chicken from the skillet and set it aside.
- Sauté Vegetables: In the same skillet, add the sliced red and yellow bell peppers along with the minced garlic. Sauté for 2 to 3 minutes until the peppers begin to soften and the garlic is fragrant.
- Make Sauce: Reduce the heat to medium-low and pour the heavy cream into the skillet with the peppers and garlic. Stir in the grated Parmesan cheese, stirring constantly until the sauce becomes creamy and smooth.
- Combine and Serve: Return the cooked chicken to the skillet and toss in the drained fettuccine pasta. Mix everything thoroughly until the pasta and chicken are well coated with the creamy Cajun sauce. Garnish with freshly chopped parsley and serve warm immediately.
Notes
- You can adjust the amount of Cajun seasoning to suit your spice preference.
- For a lighter version, substitute heavy cream with half-and-half or a cream alternative.
- Adding a pinch of crushed red pepper flakes can enhance the dish’s heat if desired.
- Freshly grated Parmesan will give a better flavor than pre-grated cheese.
- This dish pairs well with a simple green salad or steamed vegetables.
