- 1 pint cherry or grape tomatoes, chopped small
- 1 cup 4-cheese Mexican blend, finely shredded
- 15 ounces black olives, drained and chopped small
- 3 large green onions (green parts only), thinly sliced
Instructions
- Mash the Avocados: In a bowl, mash the ripe avocados together with fresh lime juice and finely minced garlic until smooth. Season with sea salt and black pepper to taste, then cover tightly to prevent browning.
- Prepare the Spiced Sour Cream: In a medium bowl, combine sour cream with chili powder, ground cumin, garlic powder, sea salt, and black pepper. Mix until well incorporated and set aside.
- Prep the Toppings: Chop the cherry or grape tomatoes and black olives into small pieces, shred the Mexican cheese blend finely, and thinly slice the green parts of the green onions.
- Assemble the Dip Cups: Using clear individual cups, start by layering a generous spoonful of refried beans at the bottom. Next, add a layer of the prepared guacamole, followed by a layer of the spiced sour cream mixture.
- Add Toppings: On top of the layered dips, evenly distribute the chopped tomatoes, shredded cheese, chopped olives, and sliced green onions for a colorful and flavorful finish. Optionally, garnish each cup with a tortilla chip for serving.
