Description

The Midnight Malibu Dirty Soda is a sweet, creamy, and fizzy tropical cocktail featuring Malibu coconut rum, flavored syrup, and a creamy layer of half & half or coconut cream, topped with sparkling water. Perfect for late-night vibes or relaxed poolside sipping, this refreshing drink offers a delightful blend of flavors with an optional garnish to elevate its presentation.

Ingredients

Scale

Drink Base

  • 2 oz Malibu rum (coconut rum)
  • 1 oz flavored syrup (cherry, blackberry, or vanilla – your choice)
  • 1 oz half & half or coconut cream (for creaminess)
  • Club soda or sparkling water, to top (~4–6 oz)
  • Ice

Optional Garnish

  • Maraschino cherry
  • Lime wedge
  • Blackberry

Instructions

  1. Fill the Glass: Add ice to a tall glass until it is well chilled and adequately filled to prepare the base for the drink.
  2. Add Malibu & Syrup: Pour in 2 ounces of Malibu coconut rum along with 1 ounce of your chosen flavored syrup (cherry, blackberry, or vanilla) to build the main flavor profile of the cocktail.
  3. Add Cream: Slowly pour 1 ounce of half & half or coconut cream over the back of a spoon so that it layers gently on top, creating a visually appealing “dirty” effect while adding creaminess.
  4. Top with Club Soda: Gently pour approximately 4 to 6 ounces of club soda or sparkling water to fill the glass without disturbing the layered effect too much, adding a fizzy, refreshing component.
  5. Mix & Garnish: Stir lightly if you prefer a blended flavor or leave it layered for aesthetic effect. Garnish with a maraschino cherry, lime wedge, or fresh blackberries to enhance taste and presentation.

Notes

  • You can substitute half & half with coconut cream or oat milk for a dairy-free option.
  • To make a mocktail, omit the Malibu rum and replace it with coconut water or coconut-flavored syrup for similar tropical notes.
  • For an extra burst of flavor and a beautiful sunset appearance, add a splash of grenadine syrup.
  • This cocktail pairs well with casual gatherings and poolside lounging due to its light and refreshing profile.
